Broccoli Tabbouleh

Enjoy this Levantine vegetarian salad with a beautiful raw honey dressing.

 

Ingredients:

  • 1 bread broccoli (360g) – shved into fine pieces
  • 1/3 cup baby spinach – chopped
  • 1 Onion – finely chopped
  • 2/3 cup finely chopped flat-leaf parsley
  • 1 cup finely chopped mint
  • 1 large ripe avocado, cubes
  • 1/3 cup (45g) slivered almonds toasted

(Add all the ingredients together in a bowl)

 

Dressing:

  • 1 table spoon of honey
  • 1 tsp ground turmeric
  • Finely grated zest and juice of ½ lemon
  • ½ cup (125ml) buttermilk

(Whisk all ingredients together and pour over the Broccoli Tabbaouleh close to serving time)
