With the flu season around the corner it is important to consume your 5 a day….everyday! This hearty vegetable soup will help you achieve this goal!
1 tsp. of olive/ canola oil
2 onions (chopped)
3 garlic cloves (chopped)
2 cups (500ml) of chopped celery/ spring onion
4 carrots (chopped)
1 can/ 410g of peeled and chopped tomatoes
1.5L/ 6cups of vegetable stock
1 tsp. of dried thyme
Salt and pepper to taste
- Add oil to a pot and heat. Then add the onions, garlic, celery (or spring onion) and carrots and sauté until the onions become translucent.
- Add the rest of the ingredients and let it simmer for 45 minutes until all the vegetables are soft.
- Season and serve with your choice of bread
Add leftover shredded chicken to the soup to increase the protein content!
