HEARTY VEGETABLE SOUP RECIPE

With the flu season around the corner it is important to consume your 5 a day….everyday! This hearty vegetable soup will help you achieve this goal!

 

Ingredients:

(Serves 4)

1 tsp. of olive/ canola oil

2 onions (chopped)

3 garlic cloves (chopped)

2 cups (500ml) of chopped celery/ spring onion

4 carrots (chopped)

1 can/ 410g of peeled and chopped tomatoes

1.5L/ 6cups of vegetable stock

1 tsp. of dried thyme

Salt and pepper to taste

 

Method:

  1. Add oil to a pot and heat. Then add the onions, garlic, celery (or spring onion) and carrots and sauté until the onions become translucent.
  2. Add the rest of the ingredients and let it simmer for 45 minutes until all the vegetables are soft.
  3. Season and serve with your choice of bread

Tip:

Add leftover shredded chicken to the soup to increase the protein content!
